A recipe for a Vegan Banana loaf…

This was a collaboration with Weetabix & Alpro to come up with a plant based swap for Veganuary. Something beyond pouring oat milk onto Weetabix. I don’t know about you but I just warm comforting food during these dark cold months and I know Banana Bread is sooo 2020/Pandemic Food but this is a Loaf - there’s a difference, no? It’s low in refined sugar and eaten warm it will convince you that the day ahead will be great. It’s also a handy sandwich swap for the lunch boxes.

December has arrived...

and I’m feeling a little out of sorts. December is usually quiet for me, work wise but after a November lockdown it’s even more so, which makes me feel a little more lost than usual at this time of the year. Normally I relish the fresh start of January approaching - new diaries and notebooks and grand planning - but when the future feels uncertain (despite the news of an approved vaccine) it just doesn’t feel right to think about travel adventures or grand work ideas when really we can only still take it a few days at a time.

A Cake

As we enter lock down part II - albeit a watered down version as schools remain open which my sanity thanks the powers that be for - I had no intention other than finishing up the work I still had booked and pushing any worries about the work that got cancelled aside. I certainly wasn’t going to make sour dough (I couldn’t even contemplate it in LD1) but I suddenly felt sorry for the kids, all the little events, trick or treating and waving sparklers around madly in front of a towering thrown together bonfire and the fact the bloody clocks have changed so it’s just dark all the time, I thought I’d make them a special cake.

Early August, we experienced the best Norfolk has to offer with Raynham Norfolk at their Wild Meadow Glamping site.
