Vegan Banana Loaf | Recipe

This was a collaboration with Weetabix & Alpro to come up with a plant based swap for Veganuary. Something beyond pouring oat milk onto Weetabix. I don’t know about you but I just warm comforting food during these dark cold months and I know Banana Bread is sooo 2020/Pandemic Food but this is a Loaf - there’s a difference, no? It’s low in refined sugar and eaten warm it will convince you that the day ahead will be great. It’s also a handy sandwich swap for the lunch boxes.

1 tsp ground cinnamon

2 Weetabix crushed

75g dried fruit

50g light brown sugar

3 bananas mashed

70ml olive oil

50ml Alpro Oat Milk

Add all the dry ingredients to a bowl, mix to combine. In a separate bowl add the wet ingredients and mix. Add the wet mixture to the dry and mix thoroughly. Pour into the lined tin, add the extra sliced banana to the top and bake for 45-50 mins.

Allow to cool in the tin for about 10 mins, then remove and brush the top with maple syrup. Slice and serve warm.

This will keep in an airtight container for 3 days.
