A Cake
As we enter lock down part II - albeit a watered down version as schools remain open which my sanity thanks the powers that be for - I had no intention other than finishing up the work I still had booked and pushing any worries about the work that got cancelled aside. I certainly wasn’t going to make sour dough (I couldn’t even contemplate it in LD1) but I suddenly felt sorry for the kids, all the little events, trick or treating and waving sparklers around madly in front of a towering thrown together bonfire and the fact the bloody clocks have changed so it’s just dark all the time, I thought I’d make them a special cake.
I confess baking is actually my nemesis, I have dishearteningly turned out too many to mention and obviously never photographed disasters. From raw, to burnt to tasteless….
So this recipe from Sainsburys Magazine, was an undertaking for me, but it certainly has the wow factor and I wanted them to come home to something wow, not a plastic wrapped, sugar laden grab from the supermarket.
I’ve worked with Mitzie Wilson, who created this recipe for Sainsbury’s, before and her bakes were delicious, plus Sainsbury’s Mag rigorously test their content - it worked perfectly, I mean look at it! I’m delighted with myself for making this. And both kids said, wow when they saw it. What more could I ask for? Well… 3 of us thought it tasted amazing, 1 of us only liked the toffee sauce…. but this is from the kid whose food is not allowed to touch each other on the plate and thinks fish fingers are the ultimate delicacy so I wouldn’t hold her review too highly.
It gave me the ambitious plan to make each Thursday of lockdown Cake Thursday. It is possible that I’ve already peaked though…
