Jersey Royal Salad Recipe

I made this simple warm salad which really highlights the distinctive Jersey Royal flavour. If you'd like the recipe here it is!

 

1Kg Tesco Jersey Royal New Potatoes, scrubbed skin on

1 bunch of Asparagus, ends trimmed

6 Quails Eggs, 

1 small bag of mixed salad leaves

 

Dressing

3 tbsp Olive Oil

1 tbsp White Wine Vinegar

1 tsp Dijon Mustard

1 tsp honey

1 tbsp Mayonnaise

Salt & Pepper

 

Add the potatoes to a pan of cold, salted water and simmer for 20 mins. Drain, cool and halve them. Toss in a little olive oil and keep warm. Cook the eggs for

2 mins, soft boiled, 4 mins, hard boiled. Run under cold water and peel and cut each egg in half. Drizzle the asparagus with olive oil and add to a hot griddle pan, cook for 2 mins each side.

 

Add all the dressing ingredients to a jam jar and shake til combined, add the salad leaves and potatoes into a serving bowl, drizzle over half the dressing, toss and then add the asparagus and eggs. Drizzle over the rest of the dressing, season if required and serve.
